Instructions: Mix Grape Nuts and milk; add soda; stir well. Stir in remaining ingredients and combine thoroughly (batter will be very stiff). Place in two well greased loaf pans. Bake at 350 deg F for 1 hour. When done remove from pans and brush top of loaves with melted butter.
NOTES : I once worked with a woman who made many multiple loaves of this Grape Nuts Quick Bread every year to give to every one in the office. Eventually, she moved away. I never thought to ask her for the recipe before she left. I guess I never even really realized that I enjoyed the unique flavor of the bread so much. But I found that the following December (and every year thereafter) I got rather nostalgic for the bread. I searched for a recipe, and even made some efforts at winging it, with no success. However, I finally did track down the right recipe thanks to Betsy Couch at y the way, the woman from the office always made the breads in round loaves, baked in a coffee can. I assume she did it that way because you can fit many more loaves in the oven at one time. Anyway, I had to bake mine that way, too. Just couldnt imagine it would taste the same loaf-shaped.
