1 qt Concord grapes
2 cup cold water
3/4 x to 1 cup sugar
1/4 tsp salt
1/3 cup quick-cooking tapioca
Instructions:
Instructions: Wash and stem grapes. Add cold water and boil moderately, covered, 10 minutes. Strain through cheesecloth. You should have 3 cups of juice. If you have less, add water to make 3 cups.

Put juice in the upper part of double boiler. Add sugar. Stand over direct heat until it comes to a boil. Add salt to tapioca and stir slowly into the boiling juice, stirring constantly a few minutes. Then place over boiling water

(bottom part of double boiler) and stir a few minutes. Cover and steam 15 to 20 minutes, stirring frequently. Remove from heat.

In a bowl, whip whipping cream until soft mounds form.

Fill six to eight glasses to 3/4 inch from the top with grape tapioca and drop a mound of whipped cream on top of each.
