Amount Ingredient
1 lb medium shrimps shelled
dressing:
1 tbl asian sesame oil
1 tbl honey
2 tbl balsamic vinegar
1 tbl soy sauce
1/2 tsp hot chile oil
3 tbl vegetable stock or water
4 cup fresh spinach leaves torn into bite sized pieces
2 sm pink grapefruits peeled and sectioned
Instructions:
Instructions: Cook shrimp in salted simmering water for 3 minutes.

Drain and let cool.

In a small bowl whisk all dressing ingredients together until well blended.

On a serving platter make a bed of spinach leaves.

Sprinkle with a few tablespoons of dressing.

Arrange grapefruit sections and shrimp over spinach and drizzle with remaining dressing.

Sprinkle with scallions.

Maybe its the delicately pink grapefruit sections but this salad always seems perfect for a spring luncheon or as a prelude to a light meal. You may have to look in the Asian ingredients section of the supermarket for hot chile oil (how hot depends on the brand).
