Instructions: To prepare tart shells: In bowl of food processor, fitted with chopping blade, combine flour, sugar, and salt. Cut in butter and process mixture until butter is finely distributed. Add water and egg yolk; process until dough forms a ball (add a few more drops of water if necessary).
Heat oven to 400 degrees. Divide dough into 4 pieces; on lightly floured surface, roll out each piece to a 5-inch round. Fit each round into a 4-inch tart pan. Bake 12 to 15 minutes or until tart shells are golden. Reduce oven temperature to 350 degrees. To prepare filling: Melt 1 tablespoon butter in skillet. Add onions and saute 10 minutes, covered, stirring occasionally. Set aside. Melt remaining butter; add all apple slices and saute until tender and golden. Fill each shell with sautee onions; top with apple slices arranged in a fan pattern, alternating two Winesap slices among the Granny Smith apples in each tart. Cover apple fans with cheese; bake 5 minutes. If desired, garnish tarts with chopped chives sprinkled around edge of fan. This recipe makes 4 tarts and serves 4. Email this Recipe:
