Ingredients:

40 gm butter or margarine
1 lrg onion finely chopped
110 gm mushrooms sliced
450 gm haricots verts (or sliced runner beans) topped and talled cut into 4 cm lengths
75 x m soured cream
110 gm Mozzarella cheese grated
1/2 tsp fresh thyme or 1/4 teaspoon dried
1/2 tsp salt
Instructions:
Instructions: Preheat oven to gas mark 7 425F/220C

First heat the butter or margarine in a largish saucepan then add the chopped onion and cook over a low to medium heat until softened but not coloured about 5 minutes.

Now add the sliced mushrooms to the onion stir and continue to cook for 3 minutes before adding the prepared beans the thyme salt and some freshly milled pepper.

Turn the heat down to very low put a lid on the pan and cook the mushrooms and beans in their own juices for 5 minutes stirring them from time to time.

Next spread half of them in a buttered gratin dish pour in the soured cream spreading it evenly over them then arrange the rest of the bean and mushroom mixture over that. Finally sprinkle the Mozzarella cheese over the surface and bake in the oven for 15 minutes.

Serve hot.
