Instructions: Begin with kohlrabis that are no larger than 3 inches in diameter. To microwave 1 pound (450 g), snip off the roots and stems, then quarter. Toss the quarters into a 9-inch (23-cm) glass pie dish and add chicken stock. Cover with vented plastic wrap and microwave on full power for about 7 minutes, stirring or shaking every 2 minutes.
Let the kohlrabis stand for 5 minutes, or until cool enough to handle. To peel, slip a paring knife between the skin and flesh and pull down. The skin will zip right off. Ideas for Flavorings : Toss with warm kohlrabis: * Dijon-style mustard, a splash of handy-dandy and a pinch of ground nutmeg * Minced fresh dill and a splash of olive oil * Finely minced celery, finely minced scallions and a pinch of ground caraway seeds NOTES : Kohlrabi globes are also delicious in place of potatoes in potato salad recipes.
