Ingredients:

1 tbl dried oregano
4 x chicken breast halves, skinless and boneless
3 tbl olive oil
1/3 cup dry white wine
1/3 cup chicken broth
2 x ripe tomatoes -- peeled and chopped
3 tbl olives -- sliced
2 tbl capers
1/4 cup all-purpose flour
Instructions:
Instructions: Combine flour and oregano in a shallow dish; dredge chicken breasts in flour mixture. Heat olive oil in a large skillet over medium heat; add chicken breasts, and cook 10 minutes, turning once. Add wine and broth (if wine is not desired, double amount of chicken broth or substitute apple juice); simmer 10 to 15 minutes. Add chopped tomato, olives, and capers; cook until thoroughly heated. Spoon into serving dish; sprinkle with Feta cheese.

Yield 4 servings.
