1. In a medium saucepan, combine spelt berries and water. Bring to a boil, then reduce heat and simmer for 1 hour, or until just render. Drain well and chill. 2. In a large bowl, combine chilled spelt, onion, cucumber, red pepper, dill, mint, olive oil, lemon juice, and garlic. Fold in feta cheese, if desired.
