4 lb leg of lamb
2 x cloves garlic, halved & peeled
1 tbl salt
1/8 tsp pepper
3 tbl butter, melted
1/2 x lemon, Juice of
1 x onion, finely chopped
1 cup dry white wine
1/2 cup water
1/2 cup vegetable oil
Instructions:
Instructions: Wash lamb well. Slit in 4 places and insert garlic into slits. Season with salt and pepper. Combine melted butter and lemon juice and brush over lamb. Place in roasting pan with a lid. Add chopped onion, wine, and water. Cover and bake at 325 degrees for 2 hours. Remove lid: increase heat to 375 degrees. Continue baking 1 hour, basting every 15 minutes.

Transfer to platter and keep warm.

In a skillet, heat vegetable oil to sizzling. Then fry the potatoes until golden brown. Skim fat from the meat pan and add the potatoes to the meat drippings. Bake, uncovered, at 375 degrees for 30 minutes or until cooked through.

Serves 6 to 8.
