1 x onion chopped
2 tbl olive oil
1 can diced or quartered tomatoes (28 oz) undrained
1/2 cup chopped fresh parsley
1 tbl minced garlic
1 tbl dried oregano
Salt and Pepper to taste
2 lb medium shrimp peeled
1 pkt frozen peas (10 oz) thawed and
drained

Instructions: * The 1/2 cup is estimated. The fraction amount came through unreadable, so 1/2 was assumed. You might want to start with 1/4 and go from there.

1. Preheat oven to 375 F. In a large skillet, over medium heat, saute onion in olive oil until tender. Stir in tomatoes, parsley, garlic, oregano, salt and pepper. Reduce heat to low, cover skillet and gently simmer mixture for 20 minutes, stirring occasionally.

2. Remove sauce from stove; store in shrimp and peas. Transfer mixture to a 2-quart baking dish. Sprinkle with feta cheese. Bake, uncovered, for 20 to 30 minutes or until shrimp are done.

NOTES : Perfectly cooked shrimp in a fabulous sauce make this ideal for a family dinner. Holly Clegg suggests serving this Greek inspired dish over pasta or rice.
