Crust:
1 cup warm water
1 tsp active dry yeast
1 cup unbleached flour
1 cup semolina flour
1 cup cornmeal
1 tsp salt Toppings:
8 oz spinach washed and shredded
1/2 x red bell pepper sliced thin
2 lrg tomatoes sliced thin
6 oz nonfat feta cheese
8 oz lowfat mozzarella cheese
1/2 cup fresh herbs chopped I used oregano and garlic chives
Instructions:
Instructions: Makes 2 12" pizzas- about 8 servings

Crust: Throw in bread machine on dough cycle, or make in your favorite yeast dough way. Allow to rise 1 hour.

Assembling:
Roll or press dough to fit pans. Layer with spinach, herbs, peppers, tomatoes and cheese. Bake in a very hot over- 475-500 degrees for about 10-15 or until done :-).

NOTES : Hi all, I had this pizza the other night and was really pleased with how it came out.

This recipe makes enough for 2 12" pizzas- well, its more a framework than a recipe I guess...

This had a very crispy delicious crust, and the spinach sort of dehydrated a little without becoming soggy. It was yummy!
