Instructions: Fill a large stockpot with 3 quarts of water. Bring to a boil.
Add the green beans and cook for 3 minutes. Drain. Splash the green beans with cold water. In a large bowl, add the roasted red peppers, lemon juice, lemon zest, olive oil, salt, and pepper.
