6 cup fresh green beans trimmed
1 cup diced roasted red pepper
(use from the jar)
2 tbl fresh lemon juice
1 tsp grated lemon zest
Instructions:
Instructions: In a large pot of boiling water, add the green beans and blanch for 2 minutes. Drain and rinse the beans with cold water.

Add the beans to a bowl and add the remaining ingredients. Serve the green beans at room temperature.

This recipe yields 6 servings.

Serving size: 1 cup.

Comments: The nutty walnut oil really shines through and turns ordinary green beans into something extraordinary.
