Ingredients:

2 tsp olive oil
1/4 cup diced red onion
2 x garlic cloves minced
2 cup green beans trimmed, and
cut into 1" lengths
1/4 cup low-fat low-sodium chicken broth
1 med tomato seeded, diced
1 tbl minced fresh oregano
1 tbl minced parsley
Salt to taste
Instructions:
Instructions: Heat the oil in a large heavy skillet over medium heat. Add the onion and garlic and saute for 3 minutes. Add the green beans and broth. Cover and steam for 3 to 4 minutes.

Add in the diced tomato, cover, and steam for 1 minute. Add in the oregano, parsley, salt, and pepper and steam for 30 seconds more.

This recipe yields 6 servings.

Serving size: 1/2 cup.

Comments: Instead of green beans topped with the ubiquitous French-fried onions, enjoy some fresh-from-the-garden taste.
