For the marinade: ----------------
300 ml yoghurt
300 gm mint leaves
300 gm coriander leaves
2 tsp ginger chopped
2 tsp garlic chopped
1 tsp green chillics chopped
1 tsp turmeric powder
salt
8 lrg chicken drumsticks
6 tbl sunflower oil
6 x cloves
10 x black peppercorns
4 x cm stick cinnamon
6 x cardamom
2 lrg onions sliced finely
2 tbl flaked almonds
Instructions:
Instructions: Grind all the marinade ingredients in a blender until smooth and creamy.

Then marinate the chicken for 30 minutes.

Heat the oil in a pan and add the cloves peppercorns cinnamon and cardamom.

Fry for a minute.

Add the onions.

Fry until translucent then the chicken and fry until slightly brown.

Add any remaining marinade cover and cook on a low heat until the chicken is tender Serve hot sprinkled with almonds and dried mint powder.

The mint adds freshness and makes a refreshing change from the rich red curries that are normally served in indian restaurants.
