1 cup flour
1 cup yellow, white, or blue corn
meal
4 tbl sugar
1 tbl baking powder 1 1/2 teaspoon salt
2 x eggs, beaten
1 cup milk
1/4 cup oil
1 cup Cheddar or Monterey Jack cheese, shredded
Instructions:
Instructions: Grease 9 x 9 x 2-inch baking pan. Stir together flour, cornmeal, sugar, baking powder, and salt. Make a well in the center. Combine eggs, milk, and oil. Add egg mixture all at once to dry mixture. Stir until just moistened (batter will be lumpy). Fold in shredded cheese and green chiles. Pour batter into baking pan. Bake at 425 degrees for 20-25 minutes. Cut into squares.
