Ingredients:
Amount Ingredient
1 tbl olive oil
1 med white onion, diced
4 x green onions, chopped
4 x cloves garlic, minced
1/2 lb very lean ground pork
8 x tomatillos, chopped
3 med New Mexico green chiles, roast, peel & dice
1 tbl chopped fresh cilantro
1/2 cup water
1/2 cup white wine
1/2 tsp ground cumin
1/4 tsp crushed oregano
1 tsp freshly ground black pepper
Instructions:
Instructions: Heat the oil in a deep saute pan and saute the onion, green onions, garlic, and pork until the pork is browned through. Add the rest of the ingredients except pepper and salt and cook over medium-high heat until it comes to a boil. Stir in the pepper and salt, reduce the heat, and simmer uncovered for 10 minutes.

Yield: Approx. 4 cups

SERVING SUGGESTIONS: Use over eggs Benedict instead of hollandaise sauce, or with huevos rancheros. Its also outstanding spooned over hot white rice.
