Amount Ingredient
15 x fresh phrik ki nu (birdseye chilies) up to, 30, chopped
10 x cloves garlic, chopped
1 tsp chopped galangal
1 tbl thinly sliced lemon grass
1/2 tsp zest of "kaffir" lime, (ordinary lime OK)
1 tsp cilantro root, chopped
5 x white pepper corns
1 tbl roasted coriander seeds
1 tsp roasted cumin seeds
1 dsh fish sauce
Instructions:
Instructions: Mix in a mortar and pestle or food processor. Will keep about a month in a fridge. You can buy commercial green curry paste (mae ploy brand is quite good), but as far as I am aware all commercial pastes contain MSG and preservatives.
