Instructions: The Raspberry Meringue Cookies that were discussed on the list last week are
similar to the following cookies which I have made every Christmas for 35 years. These cookies dont spread, need to be left in the oven ALL night, and freeze beautifully. Dont leave the mint chocolate chips out of them because they add pizzazz.

Preheat oven to 350 degrees. Beat egg whites until they hold soft peaks.

While constantly beating, gradually add sugar, and continue beating until stiff peaks form. Fold in one drop green food coloring, vanilla, chips, and salt. Place on ungreased cookie sheet. (Use parchment paper if available.)

Turn oven off as you put the cookies in. Leave in overnight.

Can be frozen.
