1/2 cup shelled pumpkin seeds
1/4 cup shelled pistachio nuts
1/4 cup roasted pine nuts
1 tbl tamarind paste
1/4 cup chopped roasted peeled poblano, New
Mexican Green or Anaheim chile pepper
1 tsp chili powder
1 tsp ground cumin
1/2 tsp salt
1 tbl dark cane or corn syrup
1 tsp distilled white vinegar
Instructions:
Instructions: In the bowl of a food processor or blender, combine all of the ingredients and puree until smooth and creamy, stopping once to scrape the sides of the bowl. This sauce can be refrigerated in an airtight container for up to one week, or frozen for up to one month.

This recipe yields 1 1/2 cups sauce.

Yield: 1 1/2 cups
