24 lrg avocados halved, pitted
48 x tomatillos husks removed,
washed, cut into quarters see * Note
3 qt cilantro leaves only - (loosely packed)
3 cup chopped onion chopped
1/2 cup Tabasco brand Green Pepper Sauce
Instructions:
Instructions: * Note: Mexican green tomatoes - if not available, substitute cherry tomatoes, quartered.

Scoop avocados into the container of a blender or food processor. Add tomatillos, cilantro, onion, Tabasco brand Green Pepper Sauce and salt. Process until smooth.

If not using immediately, cover with plastic wrap directly on top of salsa and refrigerate. Serve with tortilla chips for dipping.

This recipe yields 1 1/8 gallons.
