Ingredients:

1 tbl canola oil
1 med onion, chopped (1 cup)
3 x cloves garlic, minced (3 to 4)
1 lrg jalapeno pepper, seeded and minced
3 cup chopped fresh spinach or kale
1/2 cup water
2 cup diced winter squash
1/2 cup uncooked long grain white or brown rice
1/2 tsp ground cumin
1 tsp salt
1/2 tsp freshly ground black pepper
1/4 cup chopped fresh parsley
4 x green onions, chopped
Instructions:

For a special occasion, serve the rice in baked acorn squash halves.

In medium saucepan, heat oil over medium heat. Add onion, garlic and jalapeno, and cook, stirring often, until vegetables begin to soften, about 5 minutes.

Add spinach and cook, stirring often, until wilted, about 3 minutes. Add water, squash, rice and dry seasonings and bring to a boil. Reduce heat, cover and simmer until rice and squash are tender and liquid is absorbed, about 20 minutes (if using brown rice, about 30 minutes). Fluff rice with fork and stir in parsley and green onions.
