Ingredients:
Amount Ingredient
4 x Pickled cucumbers
1 lrg Bunc flat-leaved parsley
1 oz Fresh mint
1 oz Capers
2 x Eggs, hard-boiled
4 tbl Fresh breadcrumbs
2 x Garlic cloves
2 tbl White wine vinegar
1 tbl Sugar
8 tbl Extra virgin olive oil
Instructions:
Instructions: 1. Finely chop the cucumbers, parsley, mint and capers. Mash the hard-boiled eggs.

2. Put all the ingredients in a food processor and blend everything together to produce a smooth, green sauce. Serve warm or cold.

NOTES : This can be served as a dip, for a starter with crusty bread or crudites, or with pasta.
