Ingredients:

1 tsp Green tea leaves, (gyokuro is best but Sencha or Gunpowder will do)
100 ml Hot water, (3 1/2fl oz)
1 tsp Caster sugar
2 x Strips lemon zest
Salt and freshly ground black pepper
2 tbl Hazelnut oil
Instructions:
Instructions: Infuse the tea leaves in the hot water (dont use boiling water) for 5 minutes then strain into a pan. Add the sugar and bring to the boil and simmer until the liquid is reduced to 2-3 tbsp. Add the strips of lemon zest and leave to infuse until cold.

Remove the lemon zest, add the oil, vinegar, salt and pepper to the liquid and whisk.
