Instructions: Place onion and stock in a large pot, bring to the boil. Add brocolli and beans, cook until tender and bright green. Add remaining vegetables and bring to the boil.
Ladle half the soup into vitamiser and puree until smooth. Return to pot and reheat. Add herbs and season well. Combine egg yolks and cream, stir into soup without boiling or egg yolks will curdle. Serve hot with croutons. Email this Recipe:
