Instructions: Sieve the flour baking powder and salt into a large mixing bowl.
Rub the butter into the flour with your fingertips. Stir in the sugar. Scoop a well into the centre of the flour; beat the egg and buttermilk together then pour it in. Mix the dough together starting from the edge and working in. Turn the dough out on to a floured board. Knead it gently then pat it out into a round about lom thick. Cut into eight equal pieces. Place these on a hot lightly buttered griddle or heavy frying pan. Cook until golden (about10 minutes) then turn carefully and cook the other side. Makes 8 small scones If you have a griddle then use it; if not try a heavy frying pan preferably a castiron one. Email this Recipe:
