2 lb Amberjack
Orange Butter Almond Sauce
1/4 lb Butter
1/4 cup Orange Juice Concentrate
1/4 cup White Wine
2 x 3 dozen Yellow Raisins
1 dsh of Soy Sauce
Instructions:
Instructions: Grill fish and brush with butter while cooking. In sauce pan cook over low heat all ingredients (do not add almonds) while hot whisk until it becomes a smooth sauce. Pour over the grilled Amberjack and sprinkle Almond on top of fish.
