Ingredients:
Amount Ingredient
1 x 250 gram pac baby aubergines, cut into 5mm (1/4 inch) slices, lengthways
4 tbl Olive oil, (4 to 6)
250 gm Hard goats cheese, cut into 2cm (1 inch) oblongs (8oz)
Grated zest and juice of 1 lemon
1 x 20 grams pac fresh flat leaf parsley, finely chopped
1 x 15 grams pac fresh basil leaves, torn into pieces
Instructions:
Instructions: Preheat the grill to a moderate heat.

Place aubergine slices on a grill pan and lightly brush with 1-2 tablespoons of the oil. Cook for 2-3 minutes on each side or until golden brown and soft. Allow to cool.

In a bowl, combine the cubed cheese with the lemon zest and juice and some of the flat leaf parsley and basil.

Place a piece of cheese onto an aubergine slice. Roll up and secure with a cocktail stick. Repeat this process until all the ingredients are used.

Place rolls into a serving bowl, drizzle over the remaining oil and sprinkle with remaining herbs and season.

NOTES : Bite size pieces of goats cheese wrapped in grilled aubergine.Lovely to serve with drinks.
