Instructions: Preheat the grill to a moderate heat.
Place aubergine slices on a grill pan and lightly brush with 1-2 tablespoons of the oil. Cook for 2-3 minutes on each side or until golden brown and soft. Allow to cool. In a bowl, combine the cubed cheese with the lemon zest and juice and some of the flat leaf parsley and basil. Place a piece of cheese onto an aubergine slice. Roll up and secure with a cocktail stick. Repeat this process until all the ingredients are used. Place rolls into a serving bowl, drizzle over the remaining oil and sprinkle with remaining herbs and season. NOTES : Bite size pieces of goats cheese wrapped in grilled aubergine.Lovely to serve with drinks. Email this Recipe:
