2 lb beef tenderloin, cut into
1/2 x inch cubes
16 x white and purple pearl onions,
blanched and peeled
2 x red peppers, seeded and cut
into 1 1/2-inch cubes
1/4 lb snow peas, blanched
----------------- Marinade: ----------------
1/2 cup olive oil
1/4 cup fresh lemon juice
1/2 tsp garlic powder
1/2 tsp ground ginger
1 tsp finely chopped fresh
thyme
Instructions:
Instructions: Prepare Marinade: In a small bowl, combine ingredients and stir well.

In a large bowl, combine beef, vegetables and marinade; toss well. Let stand in refrigerator 3 to 4 hours.

Thread on skewers, and grill over medium heat, turning and basting occasionally with leftover marinade, about 15 to 20 minutes or until cooked to your liking.
