Ingredients:

1/2 cup Lemon juice
1/2 cup Fresh mint, chopped
8 x Cloves garlic, minced
2 tbl Olive oil
1/2 tsp Fresh ground black pepper
3/4 lb Chicken breast halves without skin
Lettuce leaves, shredded
Instructions:
Instructions: In a large shallow dish, combine lemon juice, mint, garlic, oil and pepper.

Slice chicken across the grain into 1/2 inch thick slices. Add to the lemon mixture and toss to coat well. Cover and marinate for at least 1 hour or overnight.

Soak bamboo skewers in water for at least 30 minutes.

Prepare gas or charcoal grill. Thread chicken on skewers and grill about 2 1/2 - 3 minutes on each side.

Serve over shredded lettuce. Garnish with fresh tomato wedges if desired.
