Instructions: Soak the skewers in water overnight - or at least 4 hours, so they dont catch fire on the grill.
Stir together peel, juice, ginger, soy sauce, and garlic, then pour over scallops. Cover and refrigerate for 30 minutes. Pre-heat grill. Drain scallops, thread onto skewers. Grill over medium-high heat for 2-2 1/2 minutes, turn and cook another 2-2 1/2 minutes longer. Serve along with this rice and grilled vegetables, a small salad and some crusty bread.
