Instructions: Cut bacon slices in half; place in a large skillet over low heat. Cook until crisp but still flexible, about six minutes.
Place on paper towels to drain. Discard fat from skillet; wipe clean with paper towel. Top four slices of the bread with two slices of the cheese, four of the apple slices, 1/4 teaspoon of the red pepper, bacon and two more slices of the cheese. Cover with remaining bread slices. Brush the outside of each bread slice with melted butter. Heat the skillet over medium heat. Place the sandwiches butter side down in the skillet. Butter top of sandwich. Cook until browned on one side, about three minutes. Turn; cook other side three minutes. Remove to a cutting board; press down with a spatula before serving. Email this Recipe:
