1 lb beef flank steak
2 tbl reduced-sodium soy sauce
1 tbl red wine vinegar
2 x garlic cloves minced
1/2 tsp freshly-ground black pepper
1 cup nonfat sour cream
1 tbl prepared horseradish
1 tbl Dijon mustard
1/4 cup finely-chopped fresh parsley
1/2 tsp salt
6 x sourdough rolls split
Instructions:
Instructions: Place flank steak in large resealable plastic food storage bag. Add soy sauce, vinegar, garlic and pepper. Close bag securely; turn to coat. Marinate in refrigerator at least 1 hour.

Prepare grill or preheat broiler. Drain steak; discard marinade. Grill or broil over medium-high heat 5 minutes. Turn beef; grill 6 minutes for medium-rare or until desired doneness. Cover with foil; let stand 15 minutes. Thinly slice steak across grain.

Combine sour cream, horseradish, mustard, parsley and salt in small bowl until well blended. Spread rolls with horseradish sauce; layer with sliced steak and lettuce. Garnish with small pickles, if desired.

This recipe yields 6 servings.

Comments: Prepared horseradish is combined with nonfat sour cream to lighten up a classic sauce. Purchase horseradish in small quantities, as it begins to turn bitter and lose its hotness within four weeks.
