1/2 cup thinly-sliced onions
1/2 cup diced green pepper
1 tbl olive oil
1/4 lb mushrooms coarsely chopped
2 tsp chopped garlic
1/2 tsp sugar
3/4 tsp Italian seasoning
3/4 tsp salt
1/2 cup chopped ripe tomatoes
6 x Italian turkey sausage links
Instructions:
Instructions: In a large nonstick skillet over medium-high heat, saute onions and green pepper in oil 2 to 3 minutes or until tender. Add mushrooms and garlic and cook 2 to 3 minutes, stirring constantly. Reduce heat to medium and stir in sugar, Italian seasoning and salt. Add tomatoes and cook 10 to 15 minutes or until liquid has evaporated.

Prepare a charcoal grill for direct heat cooking. Grill sausages 4 to 5 minutes per side or until 160 degrees is reached on a meat thermometer (meat should no longer be pink in the center).

To serve, place sausages in buns and top with sauteed vegetables.

This recipe yields 6 servings.
