Instructions: Sprinkle the chops on both sides with salt and pepper to taste. Brush the lightly on both sides with oil.
Heat an iron skillet until piping hot. Add the chops and brown well on one side, about 4 or 5 minutes. Turn and brown on other side. Continue cooking until chops reach desired degree of doneness. Arrange the toast slices on each of two plates. Arrange one hot chop on each. Top each with butter and, when it melts, sprinkle with parsley.
