2 lrg aubergines cut into lcm slices
olive oil
2 clv garlic peeled and chopped
1 x heaped tbspfreshly grated ginger
2 tbl light soy sauce
3 tbl balsamic vinegar
2 x heaped tbsp freshly chopped mint
Instructions:
Instructions: Place the aubergines on a grill tray or pan and brush with 2 tbsp oil. Grill for about 10 minutes turning once until tender.

Combine the remaining ingredients with 4 tbsp oil. Place the warm aubergines in a flat serving dish. Pour over the marinade tossing gently. Take care not to break up the aubergine flesh. Marinate for at least 4 hours. Serve at room temperature with bread.

The way you cut the aubergines depends on their shape: cut long narrow ones into long slices and short stumpy ones into large rounds.
