Ingredients:

2 lb Boneless pork loin
6 x Sandwich rolls
1 x Grilled red pepper, cut into 6 pieces
1 x Grilled yellow pepper, cut into 6 pieces
----------------- spicy mango ketchup ----------------
1 x Red onion, diced fine
1 tbl Chopped garlic
2 tbl Unsalted butter
1 x Mango, diced
1/2 cup Rice wine vinegar
1/4 cup Ketchup
1/2 cup Brown sugar
1 x Chipotle, pureed
1/2 tbl Ground ginger
1/2 tbl Ground cinnamon
Instructions:
Instructions: Prepare a wood or charcoal fire and let it burn down to embers.

Slice the pork 1/4-inch thick. Grill the meat about 1 1/2 minutes on each side.

To serve, place the pork on one side of the roll top with grilled peppers on the other half of the roll with Spicy Mango Ketchup.

Yield: 6 servings

Spicy Mango Ketchup

In a saucepan, sweat the onions and garlic. Add the mangoes and continue to cook for 3 minutes. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 5 minutes. Puree and season to taste with salt and pepper.
