Ingredients:

2 lb Boneless pork butt
Red bell peppers
Red sweet onions
Salt to taste
Freshly ground black pepper to taste
----------------- MARINADE ----------------
1 tbl Pineapple juice
1 tbl Rice wine vinegar
1/4 tsp Ground cumin
1/4 tsp Ancho chile powder
2 tbl Minced ginger
1 tbl Minced garlic
Instructions:
Instructions: Mix all marinade ingredients well.

Cut the pork butt into 1-inch cubes and marinate, covered in the refrigerator for 4 hours.

Cut the red bell peppers into 1 1/2- by 3/4-inch strips; set aside. Cut the red onions into 1 1/2- by 3/4- by 1/2-inch chunks; set aside.

Remove the meat from the marinade. Discard the remaining marinade. Thread the pork, red pepper and onion on skewers. Season to taste with salt and pepper. Grill over medium heat 5 minutes on each side.

This recipe yields 4 servings.
