1 x 1lb. pork tenderloin, seasoned or unseasoned
4 tsp orange juice concentrate
1 tsp salt
1/2 tsp coarse ground black pepper
1 tsp minced fresh thyme (best) or 1 t dried thyme
Instructions:
Instructions: Mix marinade ingredients. Slice pork tenderloin in half lengthwise - almost but not quite through so it is butterflied. Place in storage bag with half of marinade. Marinate 6-8 hours or overnight.

Put the remaining marinade in another bag with the potato slices. Marinate.

Cook potato slices over medium heat until done, about 15 minutes. We like them slightly burnt.

Cook the pork tenderloin for about 12 minutes, turning once. Serve when no longer pink inside.
