Instructions: Preheat a ridged grill pan. Remove from heat and spray with olive oil. Return pan to burner; when hot, place mushrooms in the pan, season. Grill until tender (about 4 minutes per side over moderate heat).
Meanwhile, dilute pesto with juice. Add diced roasted bell peppers. Season with salt and pepper. Add chopped spinach and toss to coat. Sprinkle cheese on a tortilla. Top with a portion of mushrooms. Top with the spinach-pepper mixture. Wrap and serve. Email this Recipe:
