Instructions: Parboil the potatoes, then cut them into thick slices. Peel and slice the pumpkin. Marinate potatoes and pumpkin in a mixture of the olive oil, lemon juice and chopped garlic.
Prepare a charcoal fire or preheat a gas grill. Grill potato and pumpkin slices until browned. Blend the dressing ingredients and toss with the vegetables. Taste for seasoning. Serve warm or at room temperature. Email this Recipe:
