4 x fresh salmon steaks, 1" thick - (5 oz ea)
3 tbl fresh lemon juice
----------------- TARRAGON SAUCE ----------------
2 x shallots minced
2 tbl chopped fresh tarragon
(or 2 tspns crushed dried tarragon)
1 cup plain nonfat yogurt
1 med plum tomato - (3 oz) seeded, and
finely minced
Instructions:
Instructions: Start a grill or preheat broiler. Brush both sides of salmon with lemon juice. Grill for 5 to 6 minutes per side, turning once, until salmon flakes when prodded with the tines of a fork.

Meanwhile, in a bowl, combine shallots, tarragon, yogurt, tomato, and parsley. Mix well.

When salmon steaks are done, arrange on dinner plates and spoon some of the tarragon sauce alongside.

This recipe yields 4 servings.
