Instructions: Put the scampi in a bowl with the oil breadcrumbs garlic parsley and salt and pepper to taste.
Stir gently until thoroughly coated. Cover and leave to marinate for 30 minutes at room temperature. Thread onto 4 kebab skewers pushing them to the centre. Cook under a preheated very hot grill for 2 to 3 minutes on each side depending on size until the crumbs are crisp. Serve immediately with lemon wedges. Serves 4 Email this Recipe:
