Ingredients:
Amount Ingredient
FOR THE SHRIMP AND MARINADE ----------------
1 lb large shrimp (16-20 count), peeled and deveined
1/4 cup fresh lime juice
1/2 cup white wine
1 x clove garlic, minced
2 tsp crushed arbol chiles
1 tbl chopped fresh cilantro
1/2 tsp freshly ground black pepper
----------------- FOR THE SALSA ----------------
1 cup cantaloupe, diced
1 cup honeydew melon, diced
1 cup Persian or crenshaw melon, diced
1 x Anaheim or New Mexico green chile, roast, peel & chop
2 tbl fresh lime juice
Instructions:
Instructions: To prepare the shrimp:
Place the shrimp in a glass bowl, stir in the marinade ingredients, cover, and marinate at room temperature for 15 minutes. Remove from the marinade and grill the shrimp for 3 to 4 minutes or until done, basting at least once with the marinade. Discard the marinade.

To prepare the salsa:
Mix all the salsa ingredients together and refrigerate for 1 hour before serving. This salsa will not keep well for more than a day

SERVING SUGGESTIONS: Accompany with risotto, grilled corn, or grilled potato slices.
