Instructions: Preheat grill to high. Toss the shrimp in 2 tablespoons of the olive oil and season with salt and pepper to taste. Grill the shrimp for 1 minute on both sides, or until cooked through. Remove the shrimp to a cutting board and coarsely chop.
Combine the shrimp, 2 remaining tablespoons olive oil, avocados, onion, pepper, lime juice, cilantro and crushed tortilla chips in a medium bowl and season with salt and pepper to taste. Place a heaping tablespoon of the mixture on each tortilla chip round and garnish with cilantro leaves. Serve immediately. Makes 8 servings. Email this Recipe:
