Amount Ingredient
2 lb uncooked large shrimp shelled, cleaned
Fresh pineapple cut 1" chunks
1 lrg onion cubed
----------------- MARINADE ----------------
1 cup pineapple juice
1/4 cup olive oil
Juice of 2 fresh limes
Fresh dill
Salt to taste
Freshly-ground black pepper to taste
----------------- SAUCE ----------------
1/2 cup Southern Comfort
2 cup orange marmalade
1/2 cup pineapple juice
2 tsp hot sauce
1 tbl minced jalapeno pepper
1 tsp finely-minced fresh ginger
Juice of 2 fresh lemons
1/2 tsp salt
Instructions:
Instructions: Place shrimp in marinade and leave for at least 1/2 hour.

Alternate shrimp on skewers with chunks of fresh pineapple and cubed onion. Grill until the shrimp turns pink and is firm to the touch.

Sauce: Combine all ingredients. Warm sauce over medium heat; cool prior to serving. (May be prepared in advance and refrigerated.)
