Instructions: Cut the squash lengthwise into strips about 1/2 inch thick; peel each strip.
Place the squash pieces on a large, double-layer piece of aluminum foil. Melt the butter or margarine in a small saucepan over moderate heat. Add the brown sugar, nutmeg, salt, and pepper, and stir until the mixture is melted and forms a delicious sauce. Pour the sauce over the top of the squash pieces and wrap the foil loosely around the squash, making sure to seal the folds well. Grill about 4 inches from hot coals for about 45 minutes, making sure to turn the package about every 10 minutes, so your veggie will be evenly cooked. Serve warm from the grill. Email this Recipe:
