1 lb cleaned squid
1 tbl salt
1/2 cup cilantro leaves
Fish Sauce Dip (see recipe)
----------------- MARINADE ----------------
1 pch freshly-ground white pepper
2 x garlic cloves crushed
2 tbl peanut oil
1 tsp five-spice powder
1 tsp curry powder
1 tbl finely-chopped lemongrass
1 tbl thick soy sauce
1 tsp sesame oil
1 tbl lime juice
Instructions:
Instructions: Rub the squid with salt and rinse. Slit and flatten the squid sac and make diagonal cuts on the inside surface. Cut into bite-sized pieces. Combine marinade ingredients, then marinate squid for 1 hour.

Grill squid over a charcoal grill, until just tender (about 2 minutes each side). Arrange on a serving platter and garnish with cilantro. Serve with Fish Sauce Dip.
