Instructions: Season steaks with pepper.
Heat 60g (2oz) butter in large pan. Add steaks, cook until done. Remove steaks from pan, keep warm, drain off butter from pan. Add remaining butter to pan, stir until melted. Add crushed garlic, cook 1 minute, add tarragon and mustard, stir until smooth and combined. Add brandy, cream, salt and pepper, stir sauce over low heat until sauce is reduced by half.
