Instructions: Cook potatoes in salted boiling water until tender (about 12 minutes).
Drain let cool and cut into quarters. Cook beans in salted boiling water until crisptender about 3 minutes. Drain under cold water and let cool. Light a fire in a charcoal grill or pr eheat a gas grill or broiler. In a small bowl whisk half of oil and half of lemon juice together. Brush chicken on bath sides with this mixture and sprinkle with salt. Grill or broil chicken for about 4 minutes on each side. Let cool and cut into 1/2 inch strips. Whisk remaining oil remaining lemon juice basil thyme garlic pepper and mustard together. Put chicken strips in a large bowl and combine with potatoes green beans tomatoes bell pepper olives capers and rocket. Toss with dressing and add salt. Theres no doubt that juicy strips of golden brown grilled chicken make this dish irresistible but is the cherry tomatoes that make it glitter. Any farmers market and many supermarkets will give youi choices of cherry tomatoes from tiny persimmon coloured currant tomatoes to yellow and red pearshaped miniatures as well as Tiny Tims Golden Pygmies and flavourful multicoloured Pixies.
